How to hook PreV_CalcRefdef in a hybrid without hooking all the client functions?

no matter how you hook it, it's a client function and it's going to make your hybrid a client. and it's not gonna be simpler to hook just cause you want to hook one function. it'll still be the same as it would in any ole client hack...
